This is probably the third time I’ve made this dish. We really like it when craving a meatloaf meal but wanting to keep calories more on the low side.
Things I changed I made in this recipe are 1) 1/2 lean ground beef, 1/2 lean ground pork, and 2) more garlic. For the breadcrumbs I used 1 piece of “white” bread and some of the packaged breadcrumbs mixed. Everything else followed the recipe.
It’s really good, great as leftovers and also freezes well for lunch or dinners. (The picture doesn’t really make them look that good but trust me – they are!)
