My lemon tree, only two years old, is heavy with fruit. I rummaged the intranet to find a recipe for dinner that was going to be lemony…not just chicken with lemon.
And I found this lemon risotto recipe on Epicurious. It’s pretty high in calories but I felt like it would be worth it.
And it was! I cut back on the butter and added a bit more lemon but followed the rest of the recipe pretty closely. I will definitely make this again. It was delicious and smelled amazing too!
