How can you go wrong with that combination? Given you like mushrooms and barley…throw in some bacon, (I’m not a huge bacon fan but it does offer some great flavor), with some Gruyere and thyme and you have a nice fall meal.
I LOVE getting Cooking Light magazine each month and in this months issue, there’s a really great looking casserole simply titled, Mushroom and Bacon Casserole. What an understatement! Not white button mushrooms but crimini and shiitake mushrooms, Maderia and spinach…YUM!
Serve with some great red wine, a little Pugliese, turn on the little white lights and cozy in with the Voice and Blacklist! (Monday night of course.)
OMG…this was/is amazing. So earthy…the wine was amazing with it….Is a definite save recipe.
